I made another batch of taco soup today.
Taco Soup
1 lb. ground chuck
1 large onion, diced
2 cans red kidney beans, drained
2 can diced tomatoes
1 can whole kernel corn, drained
1 can (4 oz.) chopped green chilies
1 package ranch dressing mix
1 package taco seasoning
1 can (8 oz.) tomato sauce
3 cups water
Brown ground beef in medium stockpot until no longer pink; drain excess fat. add onion and sauté for 3 minutes it until onion is tender. Add kidney beans, diced tomatoes, corn, chilies, ranch dressing mix, taco seasoning, tomato sauce, and water. Stir ingredients; cover and simmer for 1 hour.
Yield: 6 to 8 servings
I used diced chicken breast instead of ground beef, because that's what I had thawed, and diced jalapeño peppers instead of green chilies. The taco seasoning I used was the hot variety, and the diced tomatoes had chilies in them as well, so it was pretty darn spicy. Tasty, though.
